Deck the halls on a dime


Living alone for the first time gives you a whole new sense of control and independence. I get to do everything my own way and on my own time. My family has always been a "wait-until-after-Thanksgiving" family as far as Christmas decor goes, and I respect it, but I love Christmas and I just simply could not contain my excitement. I told myself to wait. But how does one not go crazy when you're flooded with Christmas in every store you walk in to? I was drooling when I went in to Target last week.

But unfortunately I've got a sick pup (click here to read more on his GoFundMe) who needs lots of medical attention, which in turn means lots of money, and I also went a couple of weeks out of work, which meant I had to keep my budget super tight.

I wanted so. badly. to buy up Target and HomeGoods and clear them of their Christmas sections, but I'm a lady on an extreme budget these days, so I had to figure something else out. This year I did all of my Christmas decor shopping at, drum roll please, the Dollar Tree.

I went garland crazy. You can wrap garland anywhere and things immediately look more festive! I want to keep it on my bar cart year-round! I also threw two Christmas kitchen towels over the handle to pull it all together. (PS- the wine glass and candy canes inside it were also from the Dollar Tree!) I bought 5 strands of garland total + 2 towels + 1 box of candy canes= $8 total.

Ok let's be real- I have two huskies with endless energy and I do not have the patience for glass ornaments. They're pretty, sure. But I don't need sliced up paws and endless sweeping and frustration just because those nuts think the ornaments are more of their ball toys to toss around. I bought 6 packs of varying ornaments (I got 4 of the same gold and silver ornaments and 2 packs of red to add a little bit of color). And again, garland. It fills up the extra space and makes the tree so much shinier! 6 packs of ornaments and 2 strings of garland? $8 to decorate the tree.
These mini Christmas trees make several appearances in my house. They're so festive and for $1 each I went a little nuts and bought 4 of them. They look great on an end table, coffee table and/or kitchen table! I also bought 3 festive faux flower bunches and put them in little glass jars. $5 total. Now I won't lie and say the "home for the holidays" sign didn't come from Target- but it was from the $1, 3,5 section for only $3, bringing this table to a total of $8.
Stockings! Oh how I love to jam-pack stockings full of goodies months before Christmas. I was so thrilled that the Dollar Tree had Star Wars stockings, because it's perfect for my nerdy boyfriend. They also had stockings for pups to fulfill all of my dog-lady desires (and cats, for you crazy cat ladies!). I have yet to buy a stocking for myself, but I know my mom and dad will pull through on one for their house ;)  Stockings= $3 total.
Wine glasses!! I'm so big on wine glasses. I used to be a crazy coffee mug hoarder (I won't lie, I still am) but as soon as I was introduced to the gloriousness that is wine, I became a wine glass hoarder. I stalk HomeGoods wine glass section on the regular because they have the cutest glasses for great prices. But low and behold, the Dollar Tree had these simple yet gorgeous glasses (they've got a gold lining on the top! Ahh). I bought a few for drinking, and one to hold candy canes in on the bar cart! Four wine glasses= $4.

Obsessed with the gold rim. It takes them from simple to elegant, and they look far more expensive than $1! They even have matching coffee mugs (got those, too) and plates so you can have a gorgeous table setting if you're hosting Thanksgiving or Christmas dinner!



And the grand total? $31 for all of this holiday gloriousness.
I did purchase a couple other things that weren't photographed, but all in all, I didn't go over $50! The Dollar Tree is your friend! While I was in HomeGoods I also made a few other purchases (a Christmas themed mug that says "Dog Mom" because that's the kind of person I am) and some gift wrap.
The Dollar Tree also provided me with 6 rolls of wrapping paper, however I will say that HomeGoods has amazing prices on gift wrap and you generally get more square feet!  And the Dollar Spot at Target is home to many cute glitter mini-trees and festive signs.

In Susie's Kitchen: Crock Pot Creamy Enchilada Soup

I've made more enchilada soups than I can count. This blog might turn into an enchilada soup blog soon enough. But today I tried a crock pot version of creamy enchilada soup and it honestly was everything I've ever dreamed of and more in an enchilada soup. And I honestly have dreamed about it before. Plus it has to be one of the easiest and cheapest meals I've made in  a long while!

Without further ado, here's the recipe!

Ingredients:

  • 2 frozen chicken breasts
  • 1 can of corn (don't drain!)
  • 1 can of black beans, drained and rinsed
  • 1 can of Rotel
  • 1 package of dry ranch dressing
  • 8 oz. of cream cheese (or greek yogurt if you're healthier than me)
  • 1 teaspoon of cumin (I always go overboard and add a little more!)
  • 1 teaspoon of onion powder (I also added a few frozen onions)
  • Sour cream (optional)
  • Cilantro (optional)
  • Tortilla chips (optional)
  • Mexican-blend cheese (optional)


Cooking Instructions:
  • Put the frozen chicken breasts into the crock pot 
  • Top the chicken with the Rotel, beans, corn, ranch dressing, and all of your spices
  • Stir together
  • Top with cream cheese
  • Set the crock pot on low and cook for 6-8 hours (I cooked mine for 7)
  • Stir occasionally to mix the cream cheese in
  • Shred the chicken once it's finished
  • Garnish with sour cream, cheese, cilantro, and crumbled tortilla chips
One of the most painless meals I've ever had. And so good!
I will say that I always add a little extra to all of my spices and seasonings to give it a little more flavor. So if it calls for a teaspoon, I almost always add another 1/4 or 1/2 tsp!

In Susie's Kitchen: Cheesy Salsa Verde Sausage Pasta


At this point I think you all understand what a fan I am of simple meals that I can conquer in under 30 minutes. It's very rare that I have time to cook an extravagant meal when I'm having to rush to the grocery store after work to get all my ingredients and try to have everything on the table before Rafael gets off work. So here's another 30-minute wonder!
I originally found a similar recipe with chicken, but I chose to do sausage because it's easier and cheaper!

Serves 2-3.
Ingredients:

  • 1/2 lb. smoked sausage
  • 1/2 cup heavy whipping cream
  • 1 cup pepper jack cheese
  • 3/4 cup salsa verde (If you use a mild/med this will not be spicy at all)
  • 1 cup penne pasta
  • 1 cup chicken broth
  • 2 tsp. olive oil
  • Salt & pepper (to taste)
  • Cilantro for garnish (optional)
Instructions:
  • Add the olive oil and sliced sausage to a medium skillet and cook for 3-5 minutes, or until lightly browned. Remove from heat and set aside when cooked.
  • While the sausage is cooking, in a medium pot, add the whipping cream, salsa, chicken broth, and pasta. Mix together and then bring to a boil. Once it is at a boil, lower the temperature to a simmer and cover for 15 minutes or until the pasta is soft.
  • Once the pasta mixture is cooked, remove from heat and add sausage, cheese, and if desired, add cilantro for garnish.
And with those three simple steps, you are done! Quick & easy.

In Susie's Kitchen: Cheesy Enchilada Rice


I think it's time for me to be put on a Mexican food timeout. I think about chips and salsa all day and I have dreams about enchiladas. And margaritas. Always margaritas. So since I have been on such a Mexican food kick, I decided to start trying out my own (easy) Mexican dishes for dinner! This one was crazy easy and, not to toot my own horn, pretty darn good. I hate leftovers, and I ate all of these leftovers. All. Of. Them.
So like I said...dreams about enchiladas. Except I don't actually want to have to put forth the effort to make enchiladas right now so...an enchilada rice skillet that takes 25-30 min tops? My kind of enchiladas. 

Ingredients:

  • 1 tbsp. olive oil
  • 1/2 lb chicken (I used frozen shredded chicken)
  • 1 cup uncooked rice
  • 2 cloves minced garlic
  • 1/4 cup onion (I used frozen onion!)
  • 1 can of sweet corn, drained
  • 1 can of black beans, drained and rinsed
  • 3/4 cup mild enchilada sauce
  • 1/2 cup green enchilada sauce
  • 1/4 teaspoon cumin
  • 1/4 packet of taco seasoning
  • salt & pepper to taste
  • 2 cups shredded Mexican blend cheese
  • small bunch of chopped fresh cilantro
  • tortilla chips (optional)
  • sour cream (optional)
Cooking instructions:

  • In a medium pot, boil 1.5 cups of water, then then add rice and simmer on low for about 20 minutes (could be different depending on instructions on package).
  • Heat olive oil in a large skillet on med. high and add garlic, onion and chicken. Cook until chicken is browned (3-5 min).
  • Stir in corn, black beans, rice, enchilada sauces, cumin, and taco seasoning. Let sit on med. low for 5-10 minutes, stirring occasionally, or until heated through.
  • Remove from heat and top with cheese, cilantro, crumbled tortilla chips (optional) and sour cream (optional).

In Susie's Kitchen: Oven-roasted Sausage & Potatoes


So here I am, knee-deep in a 15-month relationship loving to play the housewife role (minus the cleaning) and cook dinner, and I am scouring the "Food & Drink" section of Pinterest for at least 30min every day looking for fun, new things to try out. I'm dying over all of the extravagant pastas and salads, asking my boyfriend, "How does _____ sound?" "Omg _____ sounds amazing." "I'm totally making ______ tonight!"
His response? Every. Time?
"I just want something with meat and potatoes. Meat and potatoes, Susan."

So here I am, feeling defeated with a potato and sausage meal, only to find that 1) not only is this the easiest meal in the world, but 2) it is also incredibly delicious.
This is a must-try and I cannot tell you this enough. Plus, you most likely have half of the ingredients on hand!

Ingredients:

  • 4 russet potatoes (I used 3 medium red potatoes and 2 russet potatoes because that's what I had)
  • 1 small white onion
  • 1 lb. smoked sausage
  • 1/2 packet of zesty italian seasoning
  • Salt & pepper (to taste)
  • 1/2 tsp. garlic powder
  • 2 tsp. olive oil
Cooking instructions:
  • Preheat the oven to 400 degrees
  • While the oven is preheating, chop potatoes into small cubes/slices/whatever (doesn't actually matter)
  • Slice sausage
  • Mix potatoes, sausage and onion into a bowl with all of the seasonings and olive oil, and toss 
  • Cover a cookie sheet with foil and toss everything onto it, distributing evenly
  • Cook for 45 min, stirring slightly every 15 min (to make sure the potatoes cook evenly)
And that's it! So easy, all you have to do is wait for it to cook! Smells amazing and serves 3-4.

PS- I always add more seasoning/onions/etc. to my own taste. I like flavorful foods, so I almost always add extra, and I encourage you to do the same! Try it out as it is, and if you want more- add more!

Leopard & Checkered




It's been a long time since I've had an outfit post, and I'll tell you this: I'm just as awkward at "posing" as ever.
"What should I do with my hands?" "Do my arms look awkward?" "How fat do my thighs look from this angle?" "Okay stop let me look at these really quickly to see what I should stop doing."
And then there's the terrible moment when you look at all the images on the camera and you thought you were smiling in all of them but you actually look like you're trying to snatch someone's soul. Yeah. Does this ever get easier? Stay tuned.

But regardless of how awkward I am, I have been super into black and white checkered prints lately. I got this Forever21 top at a thrift store recently, as well as a similar print on a pair of shorts from Forever21 (also thrifted) which I can't wait to wear. I'm a black-and-white-clothing-only girl through and through, so when I can find a print that I like, I wear it to pieces. It's like wearing a flannel in the summer. And I love it.

In Susie's Kitchen: Creamy Chicken Enchilada Soup


I'll admit, I've been cooking up a storm the past few weeks and have been seriously slacking on posting recipes of the deliciousness that has ensued. I want to use the whole "I'm studying for finals! It's the end of the semester- give me a break!" excuse, but we all know I'm not the type to lock myself in my room or a library and study for hours. 
So here I am, with a long overdue recipe that I loved, and the best part? It cost me under $20 for all of the ingredients (I used store-brand for everything except the Rotel) and only took 30 minutes to make!

Ingredients:

  • 2 small corn tortillas cut into strips (I used a pizza slicer! So fast & easy)
  • 4 tsp vegetable oil
  • 1 lb of chicken breasts, diced or shredded (I used pre-cooked & diced)
  • 1/3 cup white or yellow onion
  • 3/4 cup enchilada sauce 
  • 8 oz. original cream cheese
  • ¼ teaspoon ground cumin
  • ¾ cup chicken broth
  • 1 can black beans (drained)
  • 1 can corn (drained)
  • 1 can of Rotel diced tomatoes (with green chiles- optional)
  • 1/2 cup fiesta blend cheese
  • *optional* Cilantro for garnish

Cooking Instructions:

  1. Over medium heat, add 1tsp  vegetable oil in a large pot. Add your tortilla strips and fry until they are crispy and slightly browned. Remove them and set them aside.
  2. Add the last 3 tsp of vegetable oil to the pot and turn heat to medium high. Toss in your chicken and onions and brown them. (Cook your chicken for about 7-9 min if you did not use pre-cooked, and add your onions after about 5 min).
  3. Mix together your cream cheese, cumin, and enchilada sauce in a separate bowl. 
  4. Pour in the chicken broth over the chicken and then add your cream cheese mixture. Stir in well, and then add the beans, corn, and Rotel. Let it simmer on medium-low for 5 minutes, and then cover for 10 minutes (stirring occasionally).
  5. Serve immediately with cheese, tortilla strips, and cilantro.

Recipe: Loaded Baked Potato Soup


For pretty much the entirety of my life I have had one thought towards cooking: someone else can do it for me. I love my mom's cooking, and I love fast-food. And despite my parents efforts to get me to learn how to cook, I have always objected with the mindset of getting rich and having someone else do it for me (a girl can dream, right?). 
And then a little over a year ago I got into a relationship where my boyfriend enjoyed cooking, and was good at it, so I let him do it. And it was great
But with both of our busy schedules, we mostly resorted to fast-food. I've always heard people say, "I'm so sick of fast-food, I want a home-cooked meal." Me? No. Never. I could live off of that junk.
My sister/roommate was disgusted by my eating habits and always told me that's why I was constantly sick and tired. Didn't believe her. How could my fast-food betray me like that? It wouldn't.
But all of a sudden it happened: I constantly felt lethargic. And bloated. And I could not get my skin to clear up. 
SO the fast-food queen of the world unhappily decided she would do a little cooking to see if that helped matters.
And even though I almost hate to admit it, it really has been working. And I kind of love cooking and can't stop.
But my favorite part? Finding recipes online and completely switching them up and adding new things to make them my own.

Here's my recipe for loaded baked potato soup (which tasted AMAZING and is a must-try!).

Ingredients:

  • 6 slices bacon, crumbled
  • 8 tablespoons unsalted butter (yikes...I know. I used the "light" version to compensate)
  • 4 cups milk
  • 2 green onions, sliced
  • 1 cup cup all-purpose flour
  • 1/2 pint whipping cream
  • 4 red potatoes, sliced into quarters
  • 1/4 cup white or yellow onions, diced
  • 2 cup shredded cheddar cheese
  • 3/4 cup sour cream
  • 1 can of corn, drained (optional...I just love corn in my potato soup because my mom always added it)
  • Salt & pepper (to taste)
  • Chicken broth (OPTIONAL- only to thin it if you want!)
Instructions:
  • Fry bacon in a large skillet and cook all the way through, until browned and crisp.
  • Melt the butter in a large pot over medium-low heat. Add in the flour and whisk together with the butter, and then add in onions until it's a creamy mixture (1-2 min).  Then add in the milk and whipping cream and stir again, constantly, until it thickens. Once it looks thick and consistent (add more milk OR chicken broth if you want to thin it) add in the potatoes, green onions, corn, and half of your crumbled bacon.
  • Bring it to a boil and then reduce heat to simmer until potatoes are cooked thoroughly. This took me about 30 min, but test them after about 20-25 min to check. Once the potatoes are fully cooked, add in the cheese, sour cream, the rest of your bacon (save a little to garnish it if you want) and salt and pepper to taste. For your desired consistency, add more milk OR use chicken broth to thin it.
  • I garnished mine with a little more cheese, a couple sliced green onions, and some more pieces of bacon!

Valentine's Day Makeup for Under $35


Here's the thing about being a girl in your early twenties in college: you really want to have nice things (ie: clothing, jewelry, makeup) but you also really like buying coffee and greasy fast food while you attempt to study and also seriously contemplate getting a sugardaddy so you can just drop out already. Take a look at my bank account activity and you will see this: Walmart- $30, Wendy's- $7, Whataburger- $12, QuikTrip, $5, McDonald's- $5, Starbucks- $5, etc. etc. 
And I promise you that $30 at Walmart did not go to anything but Ramen (enough to feed a small army), Taki's (3 bags, please), coffee, and coffee creamer. And maybe a pack of Orbit gum if I'm feeling extra wild at the self-checkout lane.
Bottom line? I want to be cute but I want my #1-no-mustard-sub-ketchup from Whataburger way more.

And that's where my frugality comes into play. Makeup is fun but it's ridiculously expensive and the lady at the counter is going to do it way better than you ever will so you're basically dropping $60 on a foundation that you're not even sure how to apply and I find that absurd. If I spend $10 on a foundation and it doesn't work out as well as expected, then darn, that was 2 (tall) Starbucks drinks I just threw out the window. But it's really not a big deal. But you just have to experiment a little with drugstore products and I promise you you'll wind up with a couple of things that you love for a fraction of department store counter prices. And you'll look just as hot.

I threw this look together this morning in preparation for Valentine's Day in under 20 min and spent less than $35 on the total cost of all of the products.

the juicy details





I can't tell you how many times I've reblogged photos on tumblr of someone holding a Pressed Juicery juice and then proceeding to caption it with how adamantly I want to try one of their cleanses myself. Celebrities such as Emma Roberts, Ashley Benson, Miranda Kerr, Rosie Huntington-Whitely, and my personal favorite, Whitney Port, have all been snapped with PJ juices in tow, so they must be great, right? Right.  When I saw that one of my favorite blogs, The Sorority Secrets, was holding a contest to win a 1-day Pressed Juicery cleanse, I jumped all over it. I generally have terrible luck with contests, so when I found an email from one of the sweet girls over at TSS informing me I'd soon be juicing the day away, I nearly lost it.

If any of you follow me on any sort of social media, be it twitter, facebook, tumblr, or instagram, I'm sure you've seen my incessant complaints about being on bed rest the past few weeks. After weeks of mild illnesses, I found myself really ill on New Year's Eve, and after some blood work, found out I had a nasty viral infection. And then two days later the doctor called and said I had strep throat as well. It's been a really fun-filled few weeks, in case you were wondering. After running out of Netflix shows/movies to watch and sleeping entirely too much, I started feeling better a few days ago- just in time for my juice cleanse to arrive! It really was great timing, because juice cleanses allegedly "rejuvenate" and "refresh" your body, which, after these illnesses, was exactly what I needed.


The good:
  • Although I only did a 1-day cleanse, I still felt a huge difference the next day. I slept well the night of my cleanse, and I woke up easily and without my usual groggy, I'm-ready-to-kill-whoever-speaks-to-me-first attitude (which never happens).
  • Juicing gives your colon time off from digesting. Something else that almost never happens. Sorry for eating nonstop, colon....I just love food so dang much.
  • Your body feels very light and fresh the next morning, which is a really awesome feeling.
  • There are enough juices that if you space them 2 hours apart, you don't get hungry the way you'd think you would. I felt very satisfied the whole day! The only time I got on tumblr and scrolled through a pancake tag (it took everything in me not to make pancakes) was right before bed. Once I finally convinced myself I was doing more harm than good by looking at food, I headed to bed and fell right asleep!
  • The vanilla almond juice before bed tastes like ice cream. Trust me when I say you'll be wanting ice cream by the end of the night. That was a very strategically placed juice. Well done, Pressed Juicery, well done.
  • I have never felt so hydrated in my life. The chlorophyll water and aloe vera water were a godsend. I don't know if I could have done the cleanse without them (and a 1.5 liter water bottle to chug in-between juices to secure that hunger pains wouldn't interrupt my day).
  • Overall, just as the juicing myths go, you really do feel very rejuvenated and cleansed by the next day. I loved my cleanse, and I'm ready to try a 3-day cleanse next! 


The bad:
  • I have never really leaned towards veggies...I'm more of a fruit kinda gal. I think this prevented me from falling head-over-heels for my green juices like most people do.
  • Although I felt energized the day after, I felt a little weak the day of the cleanse.
  • Whether it's TMI or not, I'll go ahead and say it: I had to pee more than a pregnant lady that day. So my advice would be to do a cleanse over the weekend or on a day off from work.
  • Although I got my cleanse for free, if you are looking into trying one yourself, they can cost you a pretty penny.

racks on racks





As I may or may not have mentioned previously, I recently moved out of my parent's house and into a house with my older sister. Among the things I miss the most would be: my sweet puppy, not having to pay for silly but necessary things like laundry detergent, my mom's incessant bear hugs....and most importantly, my walk-in closet. RIP.
My new closet is half the size of my old one, and it's entirely full already. Annnnnd I've only moved 1/4 of my clothing over.
As I am trying to work on my problem-solving skills (they are lacking), upon moving out I decided to invest in a clothing rack for seasonal items I would frequently wear, so as to make room in my closet (and to add to the aesthetic of my room). But being as busy as I am with college classes and studying, work, sorority functions, and trying to squeeze in a couple hours of sleep here and there, I've hardly had time to even unpack, let alone organize my clothing.
Finally last Sunday I had nothing on my plate until the late evening, so I (first and foremost) slept in until noon....and then decided to hang up and organize most of the clothing I've moved over. And since (miraculously!!!) the weather has been in the 50's in the mornings/evenings and 70-80's in the afternoon, I figured it was 100% acceptable to bust out my favorite (faux) furs, leather, and knits.
It makes me so giddy and excited when I walk in my room every night and see those pretties sitting there and I realize it'll only be a few more weeks or so before I can wear everything that's patiently sitting there! FALL IS HERE!

 Happy Saturday!
After a non-stop week, I'm happy to have a little break (although I spent the morning out shooting and I'm off to go babysit the rest of the evening..so can I even call this a break?).
Last week was "Senior Week" and this time next week I'll officially be a high school graduate! Crazy.

I had so much fun shooting this outfit, because it had been miserably windy and cloudy (a nightmare for photos) and as soon as I changed into this the wind died down a bit and the sun came out for a few minutes!

shorts season is in full swing



It's official: it's hot. And to top things off, my car has no A/C.
Which can mean only one thing...time to bust out the shorts. I tried to go somewhere in jeans yesterday and the second I got in my car I had only one thought: "Nope." It took all of about 30 seconds before I hopped back out and went inside to change into shorts.
I'm excited for a weather change simply because it means I get to go shopping for warm-weather clothes! Lots of shorts and sundresses and pretty summer patterns. What are you guys shopping for this spring/summer?
